My interest in cooking started out as dabbling in trying to recreate my favourite pre-made foods, restaurant dishes, and traditional recipes with lactose free and lower calorie swaps and substitutions.

What began as an attempt to still enjoy eating without later suffering the consequences of a maelstrom of gastrointestinal discomfort, uncontrolled weight gain, or both quickly grew into a genuine appreciation for food and cooking.

bite size kitchen is a documentation of culinary experiments and recipe R&D done by an amateur in a little kitchen without much in the way of fancy appliances and tools or specialty ingredients. As much as it's a way for me to keep track of what's worked and what hasn't for myself, I hope sharing an honest account of my mistakes, successes, and discoveries might help guide or inspire others (and I just love to talk about food). Here's to exploring, experimenting, and enjoying together!
